Tangy Vegetable Sandwiches

This quick and easy vegetable spread makes delightful finger sandwiches for special occasions. Your calorie-counting friends will love them! Gather up the ingredients at Bennett’s Creek Farm Market & Deli.
- 1 envelope unflavored gelatin (1 Tbs. bulk)
- 1/4 cup cold water
- 1 cup peeled and diced cucumber
- 1 cup grated carrots
- 1/2 cup finely chopped celery
- 1/2 cup chopped onion
- 1 Tbs. lemon juice
- 1/4 tsp. salt
- 3/4 cup mayonnaise
Sprinkle gelatin over cold water and place in bowl of hot water to dissolve. Combine remaining ingredients and add gelatin, mixing well. Refrigerate until set. Make finger sandwiches with rye or wheat bread.
