Nutty Stuffed Zucchini

Serve this for a special occasion, the Cajun seasoned peanuts are a specialty here at Bennett’s Creek Farm Market and Deli. They are sure to make this veggie dish special!
- 1 large onion, peeled and chopped
- 2 Tbs. olive oil
- 4 medium zucchini
- 2 garlic cloves, minced
- 2 medium carrots, peeled and diced
- 1 cup Jim’s Gems Cajun Seasoned Peanuts, coarsely chopped
- 1 Tbs. chopped cilantro
Saute onions in hot oil in medium saucepan 5 minutes.
Halve zucchini lengthwise and scoop out centers leaving a shell. Chop scooped out zucchini; add chopped zucchini, garlic and carrots to onion. Cover and cook over medium heat 10 minutes. Remove from heat, stir in chopped peanuts and cilantro.
Place zucchini shells in greased 9x13x2-inch baking dish. Fill shells evenly with onion mixture and cover with aluminum foil.
Bake in preheated 375 degree oven for 40 minutes or until shells are tender when pierced with a fork. Serve hot.
